High in protein, full of fiber, Quinoa is the “go to” grain this year…Quinoa has become to be known as one of the healthiest grains available in the world.  It is a complete protein, which means that it has all eight of the essential amino acids that our bodies are unable to produce on their own.   The vegetable protein found in quinoa is a lot easier to digest than the protein that is found in meat.  It is also free of cholesterol and trans fats, and is a great source of iron, making it part of a heart healthy diet.

2 Cups Cooked Quinoa
½ Cup Diced Tomatoes
½ Cup Diced Cucumbers
2 Green Onions, Chopped
1 Clove Garlic, Minced
1 Fresh or Roasted Red Pepper, Diced
¼ Cup Fresh Parsley, Chopped
¼ Cup Toasted Pine Nuts or Chopped Walnuts
Juice of 1 Lime
½ Cup Olive Oil

1. Place quinoa in large mixing bowl, and fluff with a fork.
2. Add the remaining ingredients to the bowl
3. Whisk the oil with the lime juice.
4. Pour dressing over the salad, toss to mix thoroughly.
