INGREDIENTS
2 Cups Cooked Quinoa
½ Cup Diced Tomatoes
½ Cup Diced Cucumbers
2 Green Onions, Chopped
1 Clove Garlic, Minced
1 Fresh or Roasted Red Pepper, Diced
¼ Cup Fresh Parsley, Chopped
¼ Cup Toasted Pine Nuts or Chopped Walnuts
Juice of 1 Lime
½ Cup Olive Oil

DIRECTIONS
1. Place quinoa in large mixing bowl, and fluff with a fork.
2. Add the remaining ingredients to the bowl
3. Whisk the oil with the lime juice.
4. Pour dressing over the salad, toss to mix thoroughly.
